STUFFED PEPPERS 
3 green peppers, halved, cored & cleaned

STUFFING:

1 lb. ground chuck
1/2 c. instant rice
2 eggs
Chopped onions
1/2 c. cracker crumbs
2 cans tomato soup

Place peppers in baking dish. Mix together meat, egg, rice, cracker crumbs, onion, salt and pepper and 1 can tomato soup. Stuff pepper halves with mixture and cover with the other can of tomato soup. Place in 350 degree oven for about an hour or until pepper is soft. Check part way through cooking time and add water, if needed.

Absolutely delicious, just like my mother use to make. Very easy recipe and, the tomato soup gives a wonderful flavor along with plenty of gravy to go around. We all love extra gravy on our stuffed peppers. Family said this is a keeper and, since the weather is getting cooler, I should make these once a week...Great Recipe.
