RALPH'S SUNDAY MORNING WESTERN
OMELETTE
 
6 eggs
1 tbsp. water
Salt and pepper
1 med. onion
1/2 green pepper
2 stalks celery
3 mushrooms
1/2 c. chopped ham or bacon
Soy sauce to taste
Butter

Beat eggs plus water until light. Season with salt and pepper; set aside.

Filling: Slice onion, green pepper, celery and mushrooms; add chopped ham or bacon. Flavor filling with soy sauce to taste and saute in butter until just done.

Pour egg mixture into heated skillet containing about 1/8-inch cooking oil. Cook as omelette until almost done. Add filling on half the circle. Fold over carefully with a spatula.

Grated cheese may be added here.
