SPANISH OMELETTE 
1 (12 oz.) pkg. pork sausage
8 oz. crispy crown or tater tots
8 eggs, beaten
Mushrooms, grated Cheddar cheese, chopped onion, green pepper to taste

Fry pork sausage until brown. Put in bottom of an 8 inch cake pan. Pour beaten eggs over sausage. Sprinkle mushrooms, etc. over this. Put tater tots on top. Bake at 350 degrees for 30 to 40 minutes.

Note: Potatoes should be partially thawed. If tater tots are used, they should be cut in half.
