REFRESHING SALAD 
1 head Romaine lettuce (wash & dry)
1 can mandarin oranges, drained, save the juice
1 c. red seedless grapes
1 cucumber, peeled & sliced
1/2 c. sliced toasted almonds

DRESSING:

1/2 c. olive oil
1/8 c. red vinegar
1/4 c. mandarin juice
Dash of salt
1/4 tsp. dry mustard
1/4 tsp. paprika
2 tbsp. confectionery sugar (or honey)

Prepare salad. Add mandarin oranges, almonds and dressing 5 minutes before serving.
