EASY CHEESY GARDEN VEGGIES 
1 onion, chopped
1 yellow summer squash, sliced
1 tomato, peeled and diced
Zucchini
1 red sweet bell pepper, seeded and minced
1 tsp. fresh minced (or pinch of dried) oregano or marjoram leaves
8 oz. can plain tomato sauce
2 oz. (4 thin slices, or shredded) part-skim Mozzarella cheese

Combine vegetables in a baking dish. Sprinkle with oregano or marjoram; pour on tomato sauce. Bake uncovered in preheated 350 degree oven for 20 minutes. Top with Mozzarella and bake an additional four to five minutes, until cheese melts. Makes 6 servings, 60 calories each.
