SUCCOTASH 
4 med. zucchini
4 fresh yellow corn
1 lg. can peeled whole tomatoes
1 onion
2 cloves garlic
1 tsp. black pepper
1 tsp. salt
1 tsp. basil

Slice zucchini into large pot. Cut corn off cob and add to zucchini. Add tomatoes with juice to zucchini and corn. Chop onion and garlic and add to vegetables. Add spices to taste. Mix together. Cover pot and simmer for 2 to 4 hours. Stir occasionally. Can be served as vegetable side dish or over rice or pasta.
