BROCCOLI - CHICKEN CASSEROLE 
2 pkgs. frozen chopped broccoli
1 chicken, cooked & cut up (3 1/2 lb. chicken, about right)
Velveeta cheese
1 can mushroom soup
1/2 c. mayonnaise
1 sm. can water chestnuts, sliced
1 can fried onion rings

Grease a 9 x 13 inch pan. Place thawed broccoli on bottom of pan. Cut the cooked chicken in medium sized pieces and lay on broccoli. Place thin slices of Velveeta cheese over entire pan. Mix soup with mayonnaise and spread over cheese. Sprinkle water chestnuts over top. Bake 40 minutes at 350 degrees, remove from oven. Place onion rings on top, return to oven for 15 minutes longer. Serves 8 people generously.
