“EASY PANCAKES” IS IN:

EASY PANCAKES 
1 egg
1 cup flour
1 tsp. baking powder
1 tsp. salt
1 cup milk

Mix the first four ingredients together. Then add the milk gradually until batter is smooth. Pour batter on greased hot griddle to size desired. Bake on hot griddle until tiny bubbles form around edges; flip and bake another 1-2 minutes until cooked through.

Note: Batter thickens as it sits. If the batter becomes too thick, add a little extra milk. If too thin, add another teaspoon of flour until desired consistency. A thicker batter and a hotter griddle will make thicker pancakes; a thinner batter and a cooler griddle will allow batter to spread for thinner pancakes.

Makes about 12 small pancakes.

Had a hankering for pancakes and was tired of my recipe. Saw this one and it really is EASY! Adding all the milk makes thinner, delicious pancakes. :-) I used less milk for a thicker batter to make chocolate chip pancakes. Add the chips after the bubbles form, before flipping, so they don't sink to the bottom of the batter. The whole family loves these pancakes, made just the way they like them! We made this without eggs and used 1/2 cup unsweetened applesauce instead. We also omitted the salt and added 1 tablespoon sugar because of the unsweetened applesauce. We didn't use as much milk as we like thicker pancakes :) We added 1/2 teaspoon of baking soda to add some height. My daughter (Aliyah) ate almost all of them!

From someone who has never cooked from scratch... simple and quick! I just a touch of oil to help with browning, cinnamon, organic sugar, and vanilla for an extra twist. Will never go back to the box!
