HOLIDAY OYSTER CASSEROLE | |
1/2 c. Saltine crackers, crumbled 1/2 c. soft bread crumbs 1 pt. oysters, selects or standards 1/2 c. pecan halves 6 tbsp. melted butter Paprika Lightly grease a 6 x 10 glass baking dish. Combine cracker crumbs and bread crumbs and spread in the dish. Drain the oysters well on paper towels, chop the oysters coarsely. Place the chopped oysters on top of the crumb mixture; top with pecan halves. Pour the melted butter over all and sprinkle with paprika. Bake at 350 degrees for 10 to 12 minutes until heated through but not browned. Serve immediately. Serves 4 to 6. This can be prepared early in the day and baked when ready to serve. This can also be doubled. If you double bake in a 9 x 13 dish and cook about 10 to 15 minutes. This is a delicious (if you like oysters) side dish for holiday meals, nice for a buffet, and good with ham and turkey! |
