FRESH MUSHROOM MARIMARA 
1 clove fresh garlic, chopped fine
3/4 c. sliced fresh onion
2 tbsp. olive or salad oil
3 c. diced fresh tomatoes
1 1/2 tsp. salt
1/4 tsp. ground black pepper
1/2 tsp. whole oregano leaves
1-1 1/2 lb. sliced mushrooms

Cook garlic and onion until onion is transparent. Add tomatoes and seasonings; cook, uncovered, until most of the liquid has evaporated and the tomatoes have formed pulp.

Add mushrooms and cook slowly 10 minutes or until mushrooms are tender. Serve as a vegetable or as a sauce over meat patties. Yield 6 servings.
