PICKLED PEACHES 
Peaches
4 c. sugar
2 c. vinegar
2 tbsp. stick cinnamon
2 tbsp. whole cloves
2 tbsp. whole allspice

Select firm, well ripened peaches. Remove skins. Combine sugar, vinegar and spices. Boil 10 minutes. Cook peaches until tender a few at a time in the baking syrup. Pack peaches in sterilized jars. Fill jars with boiling syrup and seal while hot. Add extra syrup as needed. (Pear Pickles may be made the same way.)
