PEACH COBBLER | |
1 1/2 tbsp. cornstarch 1/3 cup brown sugar 1/2 cup cold water 4 cups sweetened sliced peaches 1 tbsp. butter 1 tbsp. lemon juice Preheat oven to 400°F. Cook together all ingredients until thickened and pour in an 8-inch round baking dish. Prepare biscuit topping. BISCUIT TOPPING: 1 cup all-purpose flour 1 tbsp. sugar 1 1/2 tsp. baking powder 1/4 tsp. salt 4 tbsp. (1/2 stick) butter 1/4 cup milk 1 egg, slightly beaten Mix together flour, sugar, baking powder and salt. Cut in butter until like coarse crumbs. Mix milk and egg. Add to dry ingredients, stirring just until moistened. Drop by teaspoonfuls on top of hot fruit. Sprinkle with additional sugar. Bake at 400°F for 20 minutes or until topping is brown.
