APPLE BARS 
2 c. flour
1/2 c. sugar
1/2 tsp. salt
1/2 tsp. baking powder
1 c. butter
2 beaten egg yolks
4 med. apples, pared & sliced (4 c.)
3/4 c. sugar
1/4 c. flour
1 tsp. cinnamon
1 slightly beaten egg whites

Pan 13 x 9 x 2 inches or 15 x 10 x 1 inch. Bake at 350 degrees for 40 minutes. Makes 4 dozen.

Combine flour, sugar, baking powder and salt. Cut in shortening until crumbs size of small peas. Stir in egg yolks. Divide in half. Press 1/2 mixture over bottom of pan.

Combine apples, rest of sugar, flour and cinnamon. Arrange over bottom of crust. Crumble remaining dough over apples. Brush egg white over all and bake. Cool. Drizzle with thin powdered sugar icing if desired.
