3 1/2 c. enriched flour 1 1/2 c. granulated sugar 1/2 tsp. salt 1/2 tsp. baking soda 1 tsp. baking powder 1 tsp. nutmeg 1/2 lb. butter or other solid shortening 2 eggs 1/2 tsp. vanilla 1/4 c. water 1 c. raisins 1. In large mixing bowl, mix first 6 ingredients (dry ingredients). 2. Cut in shortening as for pastry. 3. Add last 4 items. Mix well. 4. With hands shape into balls about the size of walnuts. They can be made larger. 5. Place on griddle or skillet over medium low heat (350 degrees F, 177 degrees C). here is enough shortening in this recipe, fat isn't needed. 6. With glass dipped in flour, flatten each cookie to 1/4 inch. 7. Cook about 3 minutes until tops are shiny and bottoms are nicely brown. 8. Turn and brown on other side. 9. Cool on paper. Store in airtight container. |
