BAKED CHICKEN DIJON 
1/3 c. butter
2 tbsp. Dijon mustard
1 clove garlic, put through a press
1 c. bread crumbs
1/2 c. grated Parmesan cheese
2 1/2 tbsp. minced parsley
6 skinned & boned chicken breast halves

Preheat oven to 350 degrees. Melt butter and blend with mustard and garlic. Remove pan from heat and stir until smooth. Mix crumbs, cheese and parsley. Dip chicken in butter mixture coating all surfaces, then hold up and let excess drip off. Dip in crumb mixture, putting crumbs into chicken to coat well. Place in a shallow baking dish. Bake, uncovered in a preheated oven until golden brown and thoroughly done. Takes about 25 minutes. Makes 6 servings.
