SYLVIA'S MEAT LOAF 
1 1/2 lb. ground chuck
3/4 c. oats, uncooked
1 egg
1/4 c. onion, chopped
2 tsp. salt
1/4 tsp. pepper 1/4 c. carrots, shredded
1/4 c. celery, finely chopped
1 c. tomato juice

Combine and pack in a loaf pan. Bake at 350 degrees for 1 hour. Let stand 5 minutes before slicing.

Note: I add 1/4 c. shredded zucchini (fresh or frozen) and 1/4 c. finely chopped red or green peppers.
