RICE SALAD 
2 c. cooked rice, (2/3 c. raw rice)
1 c. pineapple juice
1/2 c. sugar
2 c. whipping cream (1/2 pt. cream)
1 pkg. lemon Jello
1 c. boiling water
1 c. crushed pineapple, drained
1 tall jar maraschino cherries, cut up
1 can mandarin oranges, cut up

Cook rice; drain. Cool. Dissolve Jello in hot water, add sugar, pineapple, juice. Chill until starts to jell. Fold into Jello, rice, crushed pineapple, cherries, and oranges. Fold in whipped cream. Pour into bowl. Chill until firm.
