CHICKEN SPAGHETTI 
Vegetable cooking spray
1/4 c. plus 2 tbsp. diced onion
1/2 c. diced celery
1/4 c. diced green pepper
1 clove garlic, minced
1 (16 oz.) can tomatoes, undrained and chopped
1/4 tsp. paprika
1/4 tsp. chili powder
1/4 tsp. ground cumin
1/4 tsp. black pepper
1/8 tsp. red pepper
8 oz. skinned, boned, uncooked chicken breast, cut into bite sized pieces
1 c. hot cooked vermicelli, cooked without salt or fat
Parsley sprigs; optional

Coat a large skillet with cooking spray; place over medium high heat until hot. Add diced onion, celery, green pepper, and minced garlic; saute until tender. Stir in tomatoes, paprika, chili powder, cumin, pepper, and red pepper. Cover, reduce heat, and simmer 15 minutes. Add chicken; cover and simmer for 25 minutes. Serve chicken over hot vermicelli, and garnish with parsley sprigs, if desired. Yields 2 servings.
