“SWEET POTATO CASSEROLE” IS IN:
NEXT RECIPE:  SWEET POTATO CASSEROLE

SWEET POTATO CASSEROLE 
3 cups sweet potatoes, cooked and mashed
1 cup sugar
2 eggs
1/2 cup evaporated milk
1 tsp. vanilla
pinch of salt
1/3 cup butter

TOPPING:

1/3 cup flour
1 cup brown sugar
1 cup flaked coconut
1 cup chopped pecans
1/3 cup butter, melted

Combine all above ingredients until smooth. Pour into 2 qt. casserole dish. Mix all topping ingredients and spread over sweet potato mixture.

Bake at 350°F. for 35 to 40 minutes.

Reviewed this one much earlier - but am going to break it down for a serving for one - just for those days when I need something just for myself (my treat to me). This is just too good - to use only on special occasions. Cut recipe in half - then cut it down again. Most web sites carry a breakdown of how to convert recipe by cup portions - into tablespoons, etc. Have been doing this with my favorite recipes - (it works 100%)

I have made this for years but I add cinnamon and nutmeg. I also add crushed pineapple to the sweet potatoes before putting the crumble on top. I am always asked to make it. I also put some rum or bourbon in it too.

Has anybody made this recipe without the coconut? My husband won't go near it with coconut included in topping. We're not fans of sweet potatoes but I came across an "excellent" sweet potato casserole at work years ago & this one sounds similar!

I didn't realize when I submitted this recipe years ago that it would be such a HIT!!! I've made it for just about every holiday for the last 25 years and there never is any left. Made this recipe for a potluck for 24 people.. used a little more potatoes but IT WAS A HUGE HIT!! Should almost be on the dessert table but was delicious.. The crunchy top crust is sooo good .. Definitely recommend making this!! Use fresh yams not canned :o)

I used 1/2 cup instead of the full 1 cup, added only 3 tbsp. butter to the pumpkin. The topping was very good, next time I will use have the ingredients for the topping. This is very sweet and would make a great dessert.

This is a great old church cookbook recipe. I have made this for years and it never fails. I would go so far to call it soul food; filled with southern tradition. This year I'm trying something new. In place of the flour I'm going to powderize 1/3 cup graham crackers. Ill let you know how it comes out. Thanks for posting.

Just a great recipe. I've always NOT used eggs in sweets, but did a recipe like this one last year....loved it! I do add cinnamon, a sprinkle of nutmeg or whatever strikes my fancy at the time. Lol, I cook by taste, enjoy how a dish looks. This is a keeper. 11/22/14, and for church turkey meal tomorrow evening. I make cornbread from scratch plain meal, yellow Always Save brand, and do the stewed turkey to slice, put the dressing on top in 9 X 13. (this potato will all get eaten!) *****

I an not wild about sweet potatoes but I found this a few years ago to make for my father-in-law who loves sweet potatoes and he raved about it and even had more for his dessert saying it was better than any sweet potatoe pie! He passed away a couple years ago and i still make it because everyone asks for it and I think of how happy it made him. I now even enjoy sweet potatoes made like this. Delicious!
