WHIPPED CREAM FROSTING 
1 c. chilled whipping cream
3 tbsp. sugar
1 tsp. Knox unflavored gelatin
2 tbsp. cold water
1 tsp. vanilla

In small bowl soften gelatin in cold water, about 5 minutes. Then place bowl over small saucepan of simmering water until gelatin dissolves. Whip cream until barely stiff, do not overbeat. Add sugar and vanilla, blend in well. Beat in gelatin all at once, beating only long enough to incorporate. Tint pink with red food coloring. Great on yellow cake with strawberry filling.
