SWEET POTATO AND APPLE SCALLOP 
2 c. boiled sweet potatoes, sliced thin
1 1/2 c. tart apples, sliced thin
1/2 c. brown sugar (N.B.)
4 tbsp. butter
1 tsp. salt

Put 1/2 the potatoes in buttered baking dish. Cover with 1/2 of apples. Sprinkle with 1/2 sugar, 1/2 butter, 1/2 salt. Repeat. Cover and bake 1/2 hour at 350 degrees. Uncover and bake until apples are soft and top is brown. Serves 6.

N.B. To make more healthful omit sugar and use sweeter apples.
