VEAL PAPILLOTTE 
5 oz. baby veal (pounded out flat)
2 oz. oyster dressing
1 oz. chablis
Dash oregano
1 med. sliced tomato topped with Parmesan cheese
1 med. sliced onion
1/4 oz. rum

Rub papillote paper inside with oil (veal). Center the oyster dressing rolled in the baby veal, 1 side. Place tomato slice, other side onion. Pour chablis over meat, dash of oregano; fold papillote to seal.

Place in a 350 degree preheated oven for 20 minutes. Repeat for each person. Open in a half moon, fold parchment back and add 1/4 ounce of rum and flame (optional).
