ZUCCHINI ITALIANO 
1 lb. ground sausage
1 c. onion, chopped
1 green pepper, cut in strips
1 clove garlic, minced
1 (1 lb.) can tomatoes
1 (8 oz.) can tomato sauce
1 1/4 tsp. salt
1 tsp. oregano
1 1/4 lb. zucchini, cut 1/4 inch slices
1 c. wide noodles
1 c. cheese, shredded (Mozzarella or Cheddar)
1 c. water

Brown sausage. Add onion, green pepper and garlic. Saute until meat is well browned. Stir in rest or ingredients (zucchini uncooked) except cheese and noodles. Bring to a boil. Reduce heat and cover. Simmer 15 minutes. Top with cheese.
