CRISPY APPLE PUDDING 
1 egg
3/4 c. sugar
1/3 c. flour
1 1/4 tsp. baking powder
1/8 tsp. salt
1 c. chopped apples
1/2 c. chopped nuts
1 tsp. vanilla

Beat egg, then add sugar slowly beating until very light and creamy. Combine flour, baking powder and salt. Sift into egg mixture, blending well. Fold in apples, nuts and vanilla. Spread into greased 8"x8" pan. Bake at 325 degrees for 30 to 35 minutes.
