MICROWAVE FARM STYLE POTATO
SWIRL
 
4-5 lg. potatoes, peeled
Water, salt
3-4 green onions, sliced
2 cloves garlic, minced or pressed
2 tbsp. butter
3/4 c. hot milk
2 egg yolks
Dash black pepper
Dash nutmeg
3 tbsp. chopped parsley
1/2 c. diced Mozzarella cheese
1 smoked sausage, sliced
2 tbsp. Parmesan cheese
1 tsp. dried thyme or sage leaves

Peel and cube potatoes. Place in a micro-safe dish. Sprinkle with green onion and garlic. Add 1/2 cup water. Microwave at HIGH power, covered for about 8 minutes until tender, but not mushy. Let stand 3 minutes. Drain. Mash potatoes. Add butter, hot milk, egg yolks, pepper, and nutmeg. Whip. Spoon mixture into micro-safe dish. Add parsley, Mozzarella cheese, smoked sliced sausage and 1 green onion, thinly sliced. Microwave at HIGH power for 4-5 minutes until cheese is melted. Stir to blend. Sprinkle with herbs and arrange some sausage slices on top, if desired. Sprinkle with Parmesan cheese. Microwave at HIGH power for 2 minutes until hot. Serve. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
