CHANTILLY RICE 
3 c. cooked rice
1 tsp. salt
1 c. shredded sharp Cheddar, divided
1 c. sour cream
Cayenne pepper (to taste)

Combine rice, sour cream, salt, pepper, and 1/2 cup Cheddar cheese. Spoon into a buttered, shallow 1 quart baking dish. Top with remaining cheese. Bake at 350 degrees for 30 minutes.

Yield: 4 servings.
