BEEF STROGANOFF 
1 1/2 lbs. hamburger
3/4 c. finely chopped onion
3/4 c. cracker meal
1/8 tsp. garlic powder
1 3/4 tsp. salt, divided
1/4 tsp. pepper
1 1/2 c. milk
1 c. ripe olives, optional
3 tbsp. butter
1/4 c. flour
1 c. dairy sour cream
1 can condensed consomme
3 tbsp. tomato paste
1 tsp. Worcestershire sauce
1/3 c. dry sherry

Combine first 7 ingredients. Shape into balls; brown slowly in butter. Combine flour and sour cream; add undiluted consomme, tomato paste, Worcestershire sauce, and remaining salt.

Pour over meat when firm. Cover; cook slowly 10 minutes. Add sherry and 1 cup olives (optional); mix gently. Heat 1 minute longer. Serve with rice or noodles. Serves 8.
