BEEF BROCCOLI STIR-FRY 
1 lb. fresh broccoli
1 lb. boneless sirloin
3 tbsp. vegetable oil
2 tbsp. soy sauce
Hot cooked rice
2 tsp. cornstarch
2/3 c. chicken broth
2 tbsp. sherry (optional)
1/2 tsp. sugar

Prepare broccoli. Slice steak diagonally, across grain 2 x 1/4 inch. Heat 1 tablespoon oil in wok or skillet coating sides. Add meat, stir-fry for 2 minutes and remove. Pour remaining oil in wok. Add broccoli and stir-fry for 2-3 minutes then remove.

Combine soy sauce and cornstarch. Add broth, sherry and sugar. Add to wok and cook over medium heat until thick and bubbly. Add meat and broccoli to cook and stir-fry for 2 minutes. Serve over rice.
