POTATOES SUPREME 
8 servings instant potatoes
5 strips bacon, cooked crisp
2 tbsp. chopped chives
1 c. sour cream
1/2 c. cheddar cheese, shredded

Prepare potatoes according to directions on package. Add crumbled bacon, chives, and sour cream. Mix well. Pour into casserole and sprinkle cheese on top. Bake at 350 degrees for 20-30 minutes. This casserole is better if made the day before and stored in the refrigerator.
