TASTY BAGEL SANDWICHES 
3 bagels (I use whole-wheat)
1 (8 oz.) pkg. fresh whole mushrooms
1 sweet onion (Vidalia)
3 slices provolone cheese
1 avocado, peeled and sliced
1 large tomato, sliced
3 eggs

Wash, slice and sauté mushrooms. Put in bowl. Slice sweet onion and sauté. Put in bowl.

Place slices of provolone cheese in pan. When they become brown flip over and brown the other side. Put on plate.

Toast bagels.

Slice avocado and tomato. Add to bowl.

Scramble eggs and cook.

Assemble sandwiches and enjoy!
