ITALIAN CIABATTA SANDWICH | |
1 large ciabatta bread (Italian white bread) 15 dried tomatoes 8 slices of good imported Mortadella (Italian sausage) 5 oz. grated soft Swiss cheese (could be substituted with Cheddar) 6 large leaves of flat leaf lettuce (preferably) 3 big ripe tomatoes, cut in fine slices 3 loose cups watercress 1/2 loose cup of fresh basil, finely cut 1/3 loose cup of mint leaves, finely cut 1/2 tbsp. dry oregano leaves olive oil, for drizzling salt and pepper, to taste SPECIAL DRESSING: 8 red pepper stuffed olives (or just seeded olives) 6 tbsp. olive oil 2 tbsp. balsamic vinegar 2 garlic cloves (optional but recommended) Open the ciabatta bread, spread the special dressing on the lower half, fill the bread with all other ingredients plus salt and pepper, sprinkle oregano flakes and more olive oil on the upper half, close the sandwich. Bake in a 300°F oven until hot but not burnt, or pressed between two hot plates (you can cut the sandwich in two pieces and place it into the hot sandwich maker), or as I prefer, just heated as is.
