“LOW-FAT CREAM OF LETTUCE SOUP” IS IN:

LOW-FAT CREAM OF LETTUCE SOUP 
This creamy soup can be eaten either hot or also cold for those hot summer days.

1 1/2 lb. open leaf sweet lettuce
3 large onions, sliced thin
3 garlic cloves, minced
2 potatoes (with or without skin), cut in large cubes
10 cups water
salt, to taste
oil for frying (preferably olive oil)

Begin by washing all the ingredients. Boil the potatoes in 10 cups of water with salt. Sauté onions and garlic in olive oil, that is the only fat in all the recipe, you can reduce it as much as possible. You can add some salt at this moment, if desired.

When the potatoes become tender, add lettuce and cook them until just tender, don't overcook it or the color will change from green to brownish. Then add onions/garlic with the oil and cook it a little more.

Let it cool a little bit and process everything in a blender until very smooth.

Add salt to taste and serve.

SERVING SUGGESTIONS:

 • Serve over toasted bread, either buttered/covered with some finely cut parsley or just plain.
 • Add a thin string of olive oil with crushed pepper over the surface.
