CREAMY SOUP OF LETTUCE (VERY LOW FAT) | |
This is a very healthy soup as there is almost no fat, just the small amount of the oil which became very flavorful. You can serve this cream with croutons and a thin stream of virgin olive oil over it, or better, cut large slices of stale bread, put them into the preheated oven with some butter over them until crunchy and pour the soup over each slice in a deep dish. 1 1/2 lb. lettuces (flat leaves preferred) 3 large onions, sliced 3 garlic cloves, minced 2 large potatoes 10 cups water salt, to taste olive oil for sautéing Any kind of lettuce can be used, but it is preferred the flat leaf, sweeter ones. Wash the lettuce and the potatoes but don't peel them, cut the lettuce in loose pieces and the potatoes in large chunks and boil everything in water until the potatoes are cooked (soft). In the meanwhile, sauté the onion and garlic in oil with some salt until transparent and pour this into the boiling soup (it is preferred to include the oil). Allow to cool enough to safely process this soup into a fine cream, no sieving necessary. Adjust the salt and serve. Enjoy!! Submitted by: Luis De Santis |
