SOUTHERN CHICKEN SANDWICH 
1/2 avocado (chopped)
2 tbsp. lime juice
1/4 c. chopped tomatoes
1/4 c. chopped red onion
1 tbsp. chopped cilantro
1/4 c. plain yogurt
1/4 tsp. chili powder

SANDWICH:

Whole grain bread
Lettuce
Red pepper
8 oz. chicken breast (poached)

To poach chicken breast: Boil in water with carrots, celery, onion and parsley. Cool and slice for sandwiches.

Mix ingredients for salsa. Arrange lettuce on bread then chicken. Top with salsa and a red pepper ring.

Save water from poached chicken for stock or bouillon.

Low calorie with low-fat plain yogurt. Low in fat.
