ENCHILADAS (For 6) 
1 pkg. flour tortillas (10 lg. or 12 sm.)
1 1/2 lbs. ground beef
1 med. onion, chopped
8 oz. Mozzarella cheese, shredded
6 oz. Cheddar cheese, shredded
2 cans enchilada sauce (reg. not the hot)
1 can chili without beans
1 med. pepper, chopped
Garlic powder
1 can pinto beans (if desired)

Saute beef, onion and pepper. Drain excess grease. Add chili and beans. Simmer 10-15 minutes. Thin 1 can enchilada sauce with about 1/2 can water. Dip both sides of tortillas in sauce. Sprinkle with Mozzarella cheese; top with beef mixture (put the cheese and meat down the center). Roll/fold up.

Place in lightly greased baking dish. Continue until all tortillas are filled. Take 2nd can of sauce, thin a little and pour over enchiladas. Sprinkle with Cheddar cheese and sliced black olives. Bake at 350 degrees for 20 to 25 minutes.
