HOT AND SOUR SOUP 
1/4 lb. boneless pork, cut in slivers
1 qt. chicken broth
1 tbsp. soy sauce
1/2 c. bamboo shoots, slivered
1/2 c. Kikurage mushrooms, slivered (1/2 pkg. soaked in hot water)
1 tsp. white pepper
1/4 c. red wine or cider vinegar
1 c. firm bean curd, sliced and slivered
1 tsp. red chili pepper sauce
1/4 c. water
1 tbsp. cornstarch
1 tbsp. sesame oil
1/3 c. green onions

Simmer pork in chicken broth for 5 minutes. Add soy, bamboo shoots, mushrooms. Simmer 10 minutes. Add white pepper, bean curd, chili, vinegar. Mix cornstarch and water, add to soup. Add sesame oil with green onions.
