VIDALIA ONION PIE 
2 lbs. vidalia onions, thinly sliced
1 stick butter
3 eggs, well beaten
1 c. sour cream
1/4 tsp. salt
1/2 tsp. white pepper
Dash of Tabasco
1 pastry shell, unbaked
Grated Parmesan cheese

Saute onions in butter. Combine eggs and sour cream. Add to onion mixture. Season mixture and pour in pastry shell. Top with cheese. Bake at 450 degrees for 20 minutes, then at 325 degrees for 20 more minutes. Serves 6. Good with steak or roast beef or anything.
