CHICKEN ENCHILADAS 
3 c. chopped cooked chicken
2 cans enchilada sauce
1 c. sour cream
2 c. grated cheddar cheese
1 dozen tortillas
Sliced green or black olives

Mix cooked chicken with 1 can enchilada sauce, sour cream and 1 cup cheese. Fill and roll tortillas with meat mixture. Place in 9"x13" baking pan. Flat side down and pour remaining can of sauce over tortillas. Sprinkle with olives and remaining cheese. Bake at 350 degrees for 25 minutes.
