SLICED CUCUMBER PICKLE 
1 qt. sliced medium sized cucumbers
1 onion, sliced
1 red pepper, chopped fine
1 c. sugar
1 tsp. white mustard seed
1 tsp. turmeric
1 tbsp. grated horseradish
Vinegar to cover

Mix the sliced cucumbers and onions, sprinkle generously with salt and allow to stand 3 hours. Drain and add the other ingredients. Cover with salt, vinegar weakened, if it is very strong. Heat the minutes well but do NOT boil. Seal. This pickle is very pretty and is delicious. Yields 3 pints.
