BAKED CHOPPED HERRING 
3 lbs. chopped herring
Cinnamon
3 lg. apples
3 lg. onions
1 c. brown sugar
2 lemon wedges

Lightly grease 9 inch pyrex pie plate; pack chopped herring into plate and sprinkle cinnamon to cover the top; cut into herring making approximately 9 squares and bake at 350 degrees for approximately 45 minutes to brown; chill overnight in refrigerator. Cook remaining ingredients in covered saucepan together until tender (about 1/2 hour) and also chill. Pour over herring and serve.
