CHOPPED HERRING #1 
1 lb. jar herring in wine sauce
1 winesap apple, peeled, cored and chopped
1 hard boiled egg, mashed
1 green pepper, chopped
1 strip celery, minced
2 slices rye bread, unseeded, crusted
1 tbsp. oil
1 tbsp. sugar

Drain herring and reserve liquid. Chop herring, onion, egg, pepper, celery, and apple together in large bowl. To reserved liquid add oil, sugar and rye bread, broken in pieces. Squeeze excess liquid out of bread. Add to mixture. Mix thoroughly. Adjust seasoning to taste. If mixture is not moist enough, add liquid a little at a time, to desired consistency.
