“PAPAYA CANDY” IS IN:

PAPAYA CANDY 
1 large green papaya
1 tsp. baking soda

CINNAMON SUGAR SYRUP:

1 cup water
1 cup sugar
1 stick cinnamon

Peel papaya and cut into strips about 1/8-inch thick. Soak in water with baking soda overnight.

Drain. Cover with water and cook 10 minutes.

Drain and make a syrup of 1 cup water, sugar and cinnamon. Add papaya and cook slowly for 1 hour.

Cool and serve with sharp cheese.

Makes 12 servings.
