CHILI CHICKEN CASSEROLE 
1 (16 oz.) pkg. noodles
1/2 c. onions, chopped
2 tbsp. butter
3 cans cream of mushroom soup
1 (4 oz.) can pimento, chopped
2 tbsp. green chili peppers, diced
1 whole chicken (3 or 4 lbs.)
Salt & pepper
Grated Cheddar cheese

Prepare noodles according to package directions. Boil chicken and de-bone. Cook onions in butter until tender. Stir in soup, pimentos, peppers, salt and pepper to taste. Cube chicken. In 4 quart casserole, layer 1/2 noodles, 1/2 chicken, 1/2 soup mixture and 1/2 cheese. Repeat layers. Bake uncovered 45 minutes at 350 degrees.
