GRILLED BEEF KABOB OVER RICE | |
1 lb. boneless beef sirloin steak, cut into 1-inch cubes 1 c. Italian salad dressing 1 small onion, quartered 1 red bell pepper, cubed 1 small zucchini, cut in chunks 1 small yellow squash, cut in chunks 1/2 green bell pepper, cubed 2 c. hot cooked rice 2 tbsp. fresh parsley, chopped Pour salad dressing over beef cubes in a shallow baking dish. Cover and marinate in the refrigerator, turning occasionally, for 4 hours. Alternate beef, onion, red and green peppers, zucchini and yellow squash on skewers. Grill, turning and basting with the remaining marinade, for 5 to 7 minutes or to desired doneness. Combine rice and parsley. Serve kabobs over rice. |
