STEAMING SPICY BAKED APPLES 
Peel of 1/2 lemon
4 cooking apples
4 tbsp. butter
4 tbsp. brown sugar
Cinnamon to taste
1 c. boiling water

Place boiling water and lemon peel in round baking dish (pie plate is a good size). Core apples. Fill each apple with 1 tablespoon butter and 1 tablespoon sugar. Dot with ground cinnamon. Place in baking dish. Place baking dish on rack in the wok over simmering water. Cover and steam 30 minutes or until apples are tender, basting occasionally. Serve warm or cold.
