CHICKEN CASSEROLE 
2 1/2 c. diced, cooked chicken
1 1/2 c. chopped celery
1 can cream of mushroom soup
2 tsp. lemon juice
2 tbsp. grated onion
2 tbsp. mayonnaise
3 hard-boiled eggs
1 can small peas, drained (optional)
1/2 c. slivered almonds
2 c. crushed potato chips
1/2 c. shredded sharp cheese (Cheddar)

Combine all ingredients, except potato chips and cheese. Blend well. Spoon into lightly greased 2 quart casserole. Sprinkle with potato chips.

Bake at 350°F for 20 minutes. Sprinkle with cheese and return to oven until cheese melts.
