SALT-RISING BREAD | |
1 to 4 c. milk Add: 1 tsp. flour Pinch of salt, soda and sugar Beat well. Cover and let rise in a warm place, which will take several hours. When light, set in a cool place until next morning. Scald 2 tablespoons flour and when cool, add the risen meal, also a pinch of soda, salt and sugar. Let rise about 3-4 hours, putting the dish in a pan of warm water so as not to chill. When spongy, pour in warm milk and water, according to number of loaves wanted, and make this dough quite stiff. Let stand until light and mold into loaves very carefully. When double its bulk, bake in moderate oven. The secret is to keep it warm all through. |
