GREAT GRANDMA'S SALT RISING BREAD | |
3 med. potatoes 3 tbsp. cornmeal 1 tsp. sugar 4 b. boiling water Flour 2 c. lukewarm milk 1 c. water 1/8 tsp. baking soda 2 tsp. salt 2 tbsp. melted shortening Peel and slice potatoes, add cornmeal, sugar, salt and boiling water. Wrap the mixture in a heavy cloth. Cover and allow to stand in a warm place overnight. Remove potatoes, add milk, water, soda, salt and shortening. Add enough flour to make a dough stiff enough to knead until smooth and elastic. Then form into loaves. Place in well greased pans, cover and let rise until double in bulk. Bake in a 400 degree oven about 20 to 25 minutes. This makes three loaves. |
