GRANDMA'S APPLE BREAD 
3 c. diced apples
1 1/2 c. cooking (Wesson) oil
2 c. sugar
2 eggs
1 tsp. cinnamon
1/2 tsp. salt (opt.)
2 tsp. vanilla
1 tsp. baking soda
3 c. flour
1/2 to 3/4 c. pecans, chopped

Beat sugar, eggs, apples and oil. Add all dry ingredients. Stir in vanilla and nuts. Pour into 4 small or 2 large bread pans or into individual large muffin tins all greased and floured. Bake at 350 degrees for 30 to 35 minutes or until pulled away from pan and brown on top. Do NOT overbake. Cake WILL be very moist!
