SALT RISING BREAD 
2 med. potatoes, peeled and sliced
1/4 tsp. baking soda
1 tsp. sugar
1 tsp. baking powder
2 1/2 c. boiling water
1 c. sifted flour
1/3 c. corn meal

To make the "sponge", place potatoes in large bowl, add sugar, soda, baking powder and water. Sprinkle with cornmeal then sift flour, over all. Don't stir. Place bowl where it will stay warm overnight. In the morning mix should be light and have "distinctive" odor. Remove potatoes with a fork and gradually add 3 cups flour, or enough to make stiff. Let rise until light and full of bubbles. Bowl will be full. Place 4 cups flour, in large bowl or dishpan, make hollow in center and add 2 tbsp. salt, 1 tsp. baking powder, 1/3 cup sugar, 1 cup boiling water.

Stir while adding hot water. Add 1 cup cold water and continue to stir. Add the beginning sponge mixture to the above along with 1/2 cup shortening. Mix until dough can be handled. Place on floured board and knead until smooth. Form into 4 loaves. Grease top and let rise until double. Bake at 400 degrees for 20 minutes. Reduce heat to 325 degrees. Bake 30 to 40 minutes longer. Remove from pans and grease tops.
